BUCKWHEAT PANCAKES
INGREDIENTS
1 cup buckwheat flour
1 cup almond meal
2 eggs - separated
1.4 cup homemade apple sauce (recipe here)
1 tbs maple syrup
1 tsp baking powder
2 tbs lemon juice
1 cup almond milk
coconut oil or butter for cooking
toppings - chia jam, coconut yogurt and/or berries
METHOD
In a small bowl, place baking powder and add lemon juice to activate.
In a large bowl mix dry ingredients.
Create a well in the middle and add egg yolks, apple sauce, sweetener and milk.
Mix until well combined.
In another bowl, whisk egg whites until medium peaks form.
Add egg whites into the rest of the batter and gently fold through.
Pre-heat your frying pan to low-med heat and spread approx 1 tbsp coconut oil over the surface.
Pour tbsp sized amounts of batter into the pan and cook until bubbles show.
Carefully flip and cook until browned.
Repeat until batter is used up
