CAULIFLOWER RICE
INGREDIENTS
1 large cauliflower
1 tbs coconut oil
1/4 tsp himalayan sea salt
6 tbs coconut cream
1 tbs coriander or parsley (optional)
METHOD
Cut the cauliflower through the center and slice into 4 parts.
There are options to 'rice-ing' your cauliflower. Either put in a Thermomix, blender or food processor and pulse until the size of rice or use a large knife to slice finely down the sides.
Heat a pan over medium heat and add coconut oil to warm up.
Add cauliflower and salt and cook for 5 minutes, stirring occasionally.
Option to add a tbs organic butter at this point, let it melt in.
Add coconut cream and coriander/parsley if using and stir through.
