STICKY DATE COOKIES
INGREDIENTS
1 + 1/2 cups pitted medjool dates
1/2 cup coconut sugar
125g organic butter or coconut oil
1 tsp bicarb soda
1 tsp cinnamon
1 cup oats
1 cup gluten free flour or spelt flour
1 tsp vanilla extract
1 egg
pinch of salt
METHOD
Preheat oven to 160 degrees and line a cookie tray.
Add dates, butter/coconut oil and coconut sugar to a small saucepan and gentle simmer for about five minutes until ingredients have melted, stirring continually.
Remove from heat and add the bicarb and stir.
Allow to rest for a few minutes.
In a bowl combine oats, flour, cinnamon and salt.
Add the egg, vanilla extract and date mixture and combine.
Once combined, roll into small balls and place on cookie tray, pressing down with a fork.
Bake for 12 minutes and remove from oven.
Allow to cool slight before transferring to a wire rack.
Best enjoyed slightly warm from the oven.
