SWEET CHILLI SAUCE
INGREDIENTS
8 long red chillies - halved lengthways
4 cloves garlic
20g ginger - peeled and grated
3/4 cup apple cider vinegar
200ml rice malt syrup or honey
large pinch of himalayan sea salt
METHOD
Remove the seeds from most of the chillies and discard.
Finely chop. Place all ingredients in a small saucepan with 1/4 cup of water.
Cook over low heat until combined, then simmer over medium heat for 15 to 20 minutes until the sauce has reduced and is slightly thick.
Transfer to a sterilised jar and let cool.
Will store in the fridge for several weeks.
