SWEET POTATO BROWNIES
INGREDIENTS
3 cups peeled & grated sweet potato
2 eggs
2 teaspoons vanilla extract
1/2 cup coconut oil
1/2 cup rice malt syrup
2 heaped teaspoons baking powder
1 teaspoon bicarb soda
3/4 cup raw cacao powder
2 tablespoons coconut flour
METHOD
Preheat your oven to 180ºC.
Grease and line a square tray with baking paper.
Mix together grated sweet potato, eggs, vanilla extract, coconut oil and rice malt syrup.
Stir in the baking powder and bicarb.
Whisk in the raw cacao powder and finally, add the coconut flour and combine.
Pour into your baking tray and bake for 30 minutes or until a skewer comes out clean ... ish. I like them gooey!
