QUINOA PORRIDGE
INGREDIENTS:
1 cup quinoa - rinsed
1 cup water
1 cup almond or coconut milk
1 tsp cinnamon
4 cloves
Pinch ground nutmeg
METHOD:
Add all ingredients into a saucepan (except extra cup of nut milk or coconut milk). Slowly bring to the boil on medium heat, stirring occasionally to ensure it doesn’t stick to the bottom. Reduce heat and simmer until the quinoa is completely cooked, adding extra milk alternative as needed. Remove from heat to cool for a few minutes to allow the porridge to thicken a little. Serve with a dash of extra milk alternative and sprinkle of shredded coconut, fruit or crushed nuts of your choice.
