BAKED EGGS

INGREDIENTS:

1 cup mushrooms - chopped

1 small brown onion - chopped

1 tin organic chopped tomatoes

1 tin organic cannellini beans - drained and washed

1 tsp mixed herbs

2 eggs

METHOD:

Preheat oven to 200 degrees.

Heat coconut oil in a pan and lightly fry onions and mushrooms. Once mushrooms are slightly soft, add them to a small oven safe dish.

Pour in the cannellini beans, tomatoes and herbs and stir to combine.

Crack the two eggs on top.

Cook in the oven for 15 minutes and serve with some paleo loaf if desired.
