GREEN PRAWN PASTA
INGREDIENTS:
1 head broccoli - cut into small pieces
2 cloves garlic
500g raw prawns - deshelled
1/4 cup water
3 zucchini - spiralised
Zest and juice of one lemon
1 cup flat leaf parsley - chopped
2 cups rocket
Nutritional yeast to serve (optional)
Olive oil to drizzle
METHOD:
Place a pan over medium high heat and melt coconut oil.
Cook prawns, garlic and chilli until prawns are cooked through and set aside.
Add broccoli to the pan with water, cover and leave to steam for 3 minutes.
Add prawns into the pan.
Pour lemon juice over and toss together.
Place parsley and rocket into the pan and toss everything to combine.
Serve in bowls and top with olive oil and nutritional yeast
