CLEAN SATAY CHICKEN

INGREDIENTS:

600g organic chicken thighs - cut into 2cm pieces

Bamboo skewers - soaked for an hour

8 tbs pure peanut butter

1 tbs honey

Juice from 2 limes

2 garlic cloves - crushed

1 tbs tamari

100ml water

METHOD:

Blend the peanut butter, honey, lime juice, garlic, tamari and water together by whisking in a bowl. Add the chicken to the bowl and cover, set aside to marinate for 2 hours or overnight. Thread onto skewers. Heat a large pan on a medium high heat and melt coconut oil (alternatively, these can be cooked on a grill or BBQ). Cook in batches for three minutes on each side or until golden. Serve with spiralized raw carrot, zucchini and other living foods. Top with coriander if desired.
