QUICK + EASYPANCAKES
INGREDIENTS:
Pancakes:
1/2 mashed banana
1/2 cup oats blended
1/3 cup almond/coconut milk
1 egg
Cinnamon
Topping:
1/4 cup frozen berries (or fresh, whatever you have)
1/2 tbs honey
Vanilla extract
Nut butter (I used almond)
METHOD:
Heat pan on low heat with some coconut oil. Mix all the pancake ingredients together in a bowl. Spoon the mixture into pancake sized circles on the pan. Let them sit until the top starts to bubble. Flip them over and let the other side brown.
Whilst the pancakes are cooking, add the sauce ingredients (without the nut butter) into a small bowl and heat for 1- 2 mins.
Transfer pancakes onto a plate, top with sauce and nut butter. Add more honey on top if you like it sweet!
