VEGGIE ZOODLES
INGREDIENTS:
3-4 zucchinis (spiralled)
1 tbsp coconut oil
1 clove garlic
1 tsp ground white pepper
2 tbs ground (or crushed)
almonds
1 tbs nutritional yeast
5 fresh basil leaves
1 punnet cherry tomatoes
1 cup spinach
METHOD:
Spiral the zucchinis and pat dry. Place pan on medium heat. Add oil and garlic.
Add zucchini, almonds and additional herbs/spices. Cook for 10 minutes.
Add basil, cherry tomatoes, spinach and nutritional yeast and cook for a further 5 minutes.
Remove from heat and serve and add salt and pepper to taste!
