KICKSTART RAINBOW ENERGY SALAD

INGREDIENTS:

1 cup chopped tuscan kale

1 cup shredded red cabbage

2 cups grated zucchini

1 cup grated carrot

1 thinly sliced yellow/red

capsicum

1 avocado

Chopped coriander

Chopped fresh mint

Handful goji berries

Handful sunflower seeds

Handful sesame seeds

Handful sliced almond

Dressing

30ml olive/macadamia oil

Grated ginger

Lime juice

Tamari sauce or coconut aminos

Dash raw honey

METHOD:

Place all ingredients into a bowl and toss. Enjoy!
