SPICED QUINOA AND CARROT SALAD

1/2 cup quinoa

1 tsp ground cumin

1 tsp smoked paprika

1 tsp ground coriander 

4 carrots 

1 tbs honey

juice of 1/2 a lemon 

2 tbs olive oil 

1/2 cup almonds

1/2 cup sultanas/raisins

METHOD

Start by rinsing your quinoa under water for 30 seconds.  

Strain and add to a saucepan with 1 cup of water and spices.  

Season with a little salt and bring to the boil.

Once boiling, lower to a simmer and cook covered for 12 minutes.  

While quinoa is cooking, ribbon your carrots and combine in a large bowl with honey, lemon and olive oil.  

Toss all ingredients together and let cool or eat warm.  

This can be stored in the fridge, covered.
